lemon chicken



I have a slight thing for lemon. I like it on fish, in cakes, in kitchen soap, etc. This recipe is just so easy and it tastes like a vacation for your belly.  Refreshing, exciting, fulfilling, healthy for the soul.  Note that I made this before the oven ban of 2011.

Lemon Chicken

2 T olive oil
4 cloves garlic, minced
3 T white wine
Zest from 1 lemon
1 T fresh lemon juice
1.5 tsp dried oregano
1/4 tsp dried thyme
salt and pepper
2 chicken breasts, butterflied
1/2 lemon cut into slices

Preheat oven to 400 F.  Heat olive oil in a saucepan over medium-low heat, add garlic and cook for 1 minute.  Remove from the heat and add white wine, lemon zest, lemon juice, oregano, thyme, and salt and pour into a baking dish.  Place the chicken into the dish, sprinkle with salt and pepper, and tuck lemon slices around chicken.  Bake for 30 minutes, or until done.
