zucchini cakes


Another kind of strange experiment.  But this one I enjoyed!  Perfect as a side or little snack.


Zucchini Cakes
 
2 grated zucchinis, liquid squeezed out
1/2 small onion, grated
1 T spicy mustard
1/4 cup whole wheat bread crumbs
1 egg white
salt and pepper

Combine all ingredients and form 4 patties.  Fry on the stove top until browned over medium-high heat.
